What to Cook This January (1)

Let’s hear it for the New Year! Last year, I finally got back into the groove with recipe production. I’m so excited to share with you all the recipes that I’ve been working on behind the scenes. Some are made months ahead of time!

If you’re looking for wholesome, satisfying, veggie-packed recipes, you’re in the right place. You’ll find a bunch of them in my guide to seasonal produce below. For in-depth resources and tips on how to eat real food, be sure to check out my cookbook, Love Real Food.

    Hi there, I found your blog today while looking for new recipes. Last year, I went on a low cholesterol diet and have eliminated all land animals. I’m bored of stir fry and need some simple variety.

    I want to say that I so appreciate the text versions of your recipes, since I’m blind and use screen reading technology, which can’t work with pictures. I can’t wait to start trying your recipes, thanks! Black bean and veggie enchiladas, here I come!

      Thanks, Olesea! I’m so glad to hear that. :) I don’t have a print-friendly version, but that’s a good idea. Most of my monthly guides conclude with a collage, which I think you could open in another window and print, if that helps.

    I love your blog and received your book for Christmas. Yesterday I made the spinach and artichoke quiche with the almond meal crust. I’ve made a lot of frittatas in my day, and this is my absolute favorite!!
    The crust added so much flavor, and the milk made all the difference. I had just been making mine with eggs. A fantastic recipe I will be making again soon! Thank you.

    Also, I did your survey this morning but forgot to add an additional comment. I’m in Australia and it would be amazing if you could put the oven temperature in degrees Celsius as well as Fahrenheit. I often use a converter to help me but it would make it so much easier if it was already there.

    What a bounty of recipes, advice, and encouragement you give all of us. Let me assure you we all appreciate it muchly (as my granny would say).
    For me, the most helpful addition you could make to your recipes would be make-ahead or pause notations. If some portion of the recipe could be made a day or so ahead, or could sit for the half hour it takes me to answer one or two emails, that would be fantastic.
    You are truly a gem among women! Thanks for all you do.

      Hi Joanne! There is a better way to print—if you scroll down to the recipe itself, you’ll see a “print” button, which will only print one very small photo but includes all of the recipe text. Hope that does the trick for you.

      Hi Christina, thank you for asking. She’s twelve weeks into her chemo regimen and has a few more treatments to go. This week, we’ll do some additional testing on her one lymph node that hasn’t gone all the way down to try to figure out what’s going on. She is very much herself, has tons of energy most days, and seems to be doing well! Happy New Year. :)

    Hi Kate! I don’t know if I’ve ever commented here but after years of using your recipes, I need to! I think I’ve made your spicy coconut kale stir fry about a million times. It’s a favorite of mine, as well as my omnivore partner’s. Every recipe on your site and in your cookbook just jives with how I comprehend and cook. I so appreciate that, I haven’t found it anywhere else. My partner’s also noted that both my “food lady” and my “yoga lady” (Yoga With Adriene) are most often seen with their dogs.     So I’ve been accessing and recommending your site for over a year and only today learned this is a vegetarian food blog! Which explains why I always come here when I need a reliable recipe for a salad, or side, or breakfast. Your recipes are so reliable! Unlike many food blogs (including big names like Food Network, Epicurious, and the formerly awesome Serious Eats), I get the sense that you or someone real has actually tried and tasted and tested these. I know the recipe will work and will most likely be awesome unless I simply am not a fan of the ingredients themselves.

    I am a pretty serious carnivore but I do worry more and more about the impact. I try to source local and sustainable meat for my kitchen, but I think I am going to give some of your meatless mains a try and broaden my kitchen horizons.

I have owned your cookbook for a few years now, but only more recently have been moving towards a more fully vegetarian diet. I love your recipes and come here first when trying something new. Foods like tofu are intimidating to me, but make everything seem easy. Your instructions, pictures, video, etc. are all so helpful and very well done.
