I’ve tried several waffle recipes over the years, and what I came up with for time and convenience was this classic waffle recipe that has you separate the egg whites and yolks so you can whip the egg whites to make extra-fluffy waffles. I’ve done yeast waffles that are great (but take too much time if I don’t plan the day before), and I’ve done recipes that mix it all up in one bowl without separating the eggs, but taking an extra 2 minutes to separate the eggs and beat the whites is well worth the time spent. This is the secret to this waffle recipe and how amazingly fluffy they are!

How to Make Homemade Waffles

  • Whisk together the dry ingredients.
  • Make a well in the center of the dry mixture and add egg yolks, oil, and milk….mix just until moistened.
  • Beat the egg whites until they are stiff.
  • Fold the egg whites into the batter.
  • Preheat your waffle iron.
  • Cook batter in waffle iron until golden-brown.
  • Add your favorite toppings and enjoy! I like to add melted butter and strawberries or blueberries….and a few tablespoons of maple syrup and sometimes some whipped cream or chocolate chips!

Yield: 8 waffles

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 cup white sugar
  • 1 teaspoon cinnamon
  • 3 egg whites
  • 3 egg yolks
  • 1/2 cup vegetable oil
  • 1 1/2 cups milk
  • 1 teaspoon vanilla (optional)

Instructions

  1. In a mixing bowl, whisk together flour, baking powder, salt, sugar, and cinnamon.
  2. Make a well in the center of the dry mixture and add egg yolks, oil, and milk. Mix just until all the ingredients are moistened.
  3. Beat the egg whites until stiff (this takes about 3-4 minutes), then fold into the batter.
  4. Cook batter in waffle iron.

Notes

If adding vanilla extra, add that with the other wet ingredients. Maple or almond extract could also be substituted.

If your flour has "settled," the amount you measure out may actually be more than 2 cups just because it's condensed. My trick for this is shaking up my canister of flour before I use it to "loosen" it all up again. If your batter does end up too thick because of this, just add a dash more of milk to be able to pour it.

To keep waffles crispy until you're ready to serve them, pop them into a warm oven single layer!
