Tips for the Best Low Carb Pot Roast:

  • Instant Pot Recommendation – You will need an electric pressure cooker for this recipe.I am using an8 quart Instant pot but you can use a 6 quartif you prefer.
  • Adding Vegetables – Make sure to add the vegetables after the roast has finished cooking in the pressure cooker. This will prevent them from getting mushy.
  • Cut of Meat – Make sure to use a tougher type of meat that will hold up. Try using rump roast, chuck roast, brisket or round roast. The pressure cooker will make it tender.
  • Brown Roast – It is not necessary but you can sear the roast prior to cooking. Just use the saute setting and put the roast inside with about a tablespoon of oil. Sear for a couple of minutes per side until it is browned.
  • Pick the Best Roast – Look for a roast that has a lot of marbling. This will result in a tender finished product.
  • Cut Roast – If you are short on time, cut the roast into pieces. I would suggest 2 to 3? pieces and reduce the cooking time to 40 minutes.
  • Dutch Oven – This roast can also be prepared in your Dutch Oven.

FAQs

Why is my pot roast still tough in the Instant Pot? ›

If it's still tough, you will need to cook it longer. The pressure cooking process breaks down tough meat, making it tender. Put the lid back on, seal the pressure cooker, and cook at high pressure for another 10 to 20 minutes.

Is it better to slow cook or pressure cook a pot roast? ›

Taste: For overall taste, the pressure cooker was the hands-down winner. Beef, carrots, and potatoes all retained their rich flavors. After 8 hours in the slow cooker, they emerged bland and seemed to need salt.

Does pot roast get more tender the longer you cook it? ›

Yes, pot roast absolutely becomes more tender the longer it cooks. Roasts are generally made from tougher cuts of meat, such as chuck or brisket, which contain a lot of collagen, connective tissue, and fat. These tougher tissues require a long cooking time to break down and for the collagen to converts into gelatin.

Is roast more tender in crock pot or Instant Pot? ›

Instant Pot roast is still pretty delicious, mind you. However, it's noticeably less tender than the Crock Pot counterpart, with a few bits on the edges noticeably softer than the middle, and a significant amount of marbling and fat remaining.

Why is my pot roast always dry and tough? ›

The most likely cause of this is overcooking. As meat cooks, its muscle fibers shorten in both length and width and eventually squeeze out the juices they normally hold. As you can imagine, this leaves meat dry, and often stringy in texture. To avoid this problem, choose less-tender cuts of meat.

Why is my roast still tough after 6 hours? ›

If your crock pot roast is tough, it is possible you didn't use a boneless chuck roast, in which cases some cuts of meat will never become fall-apart tender OR more likely, you did not cook your beef long enough. If your pot roast seems tough, cook on!

Can you overcook roast in Instant Pot? ›

Yes, just like any cooking method you can overcook a chuck roast in the Instant Pot. Follow the directions based on the size of your roast to know how long to cook it. It should be 20 minutes per pound of thawed roast.

Should pot roast be submerged in liquid? ›

Although there may be no wrong way to enjoy this one-pot classic, there are cooking tips that can help you make a high-quality pot roast every time. One of the best is that there's no need to fully submerge the roast in the cooking liquid.

What not to do to pot roast? ›

5 Mistakes to Avoid When Cooking Pot Roast
  1. Using the wrong roast.
  2. Not browning the roast.
  3. Deglazing with just broth.

How much liquid do you put in a pot roast? ›

Add enough water to the pot to cover roast; add celery, garlic, onion, basil, salt, and pepper. Bring to a boil; reduce heat to low and simmer for 2 hours and 15 minutes, adding additional water if needed to keep the roast covered.

Is pork shoulder better in Instant Pot or crock pot? ›

Slow cooking the meat means it never has the chance to toughen up and will be extra silky and tender. Pressure cooking is faster, though you may lose a little bit of the tenderness. If you're going for the pressure cook method, be sure to get a pork shoulder or pork butt, as opposed to a pork loin.

When to add potatoes to pot roast? ›

Add the carrots and potatoes to the pot when there's about an hour of cooking time left, turning the roast over when you do. To serve, spoon any excess fat off the surface and slice or shred the beef to serve with the veggies, drizzled with sauce. Serves 6-8.

Is chuck roast or chuck tender roast better for pot roast? ›

Ultimately, the choice is yours! If you want single steaks that you can marinate and pan sear, then chuck steaks are the way to go. But if you're looking forward to cooking a pot roast in the Crock Pot or in the oven in a roasting pan with some potatoes and veggies, the chuck roast is the best option.

How do you keep a pot roast moist and tender? ›

Low and Slow is the Way to Go

Whether you cook your pot roast using a stovetop, oven, slow cooker, or pressure cooker method, you'll always get the most tender and flavorful results if you use low temperatures over a long period of time.

Why is my pot roast not falling apart? ›

There are several reasons why this could have happened even after so much cooking. First, your choice of a rump roast could be a factor since cuts from the hind quarter are very muscular and, since muscles are the most resistant to breaking, this cut is quite stubborn when it comes to becoming tender.

How do I make my pot roast less tough? ›

A surefire way to make a tender, juicy pot roast is through braising; that is, cooking the meat in a small amount of liquid in a tightly covered pot at low temperature. Stove top roast recipes can be customized with your choice of herbs, vegetables, potatoes, and liquid braising mixtures.

Can you soften tough meat in Instant Pot? ›

The pressure cooker can tenderize the most stubborn cut of meat and turn tough chewy fibers into gelatin, but a few wrong moves can turn meat into a shriveled tasteless lump. Here are my do's and don'ts for getting the most flavor out of your pressure cooked meat.

How do you soften a tough pot roast? ›

Cook it low and slow with some liquid.

When it comes right down to it, it's the time spent simmering in that liquid that really matters. Simmering helps break down the connective tissue. Connective tissue breaks down to collagen. Collagen tenderizes, and adds flavor and juiciness to the roast.

Why is my beef still tough after slow cooking? ›

If you consistently notice tough beef, Carli says your slow cooker may not be working hard enough. “Try cooking for longer, or at a higher temp,” she advises.
