I eat oatmeal every single morning. I am not exaggerating, I really do.
When I realized I wanted to start doing a couple eCookbooks I knew almost immediately what the first one was going to be. Oatmeal!
These Chocolate Cherry Breakfast Cookies are a healthier morning treat. However, there are some days I want something different, something delicious and of course decadent WITH chocolate. This Chocolate Peanut Butter is that choice. It’s my “I’m feeling fancy and I know it” breakfast.
is oatmeal and oats gluten-free?
- Yes and no.
- Oats are naturally gluten-free but there is a caveat. Oats are generally on the same line as other floured grains. To avoid cross contamination issues it is best to purchasegluten-free oats.
You truly cannot go wrong with creamy peanut butter oozing out. I mean can you? My professional opinion, peanut butter and chocolate are an epic duo you cannot go wrong with them together.
(I actually made chocolate peanut butter granola earlier. It’s a winner.)
When I first made this I took one bite and knew it was my new favorite weekend breakfast. I truly ran upstairs to Roland still sleeping and made him try it. What a lucky girl I am, he puts up with me.
I’ve struggled with eating healthy with weekend breakfasts. Even more so, now that I’m gluten-free say goodbye to cinnamon rolls. Which use to be my favorite for a weekend treat. Grab myself a chemical filled tube of cinnamon rolls and frosting. My how my life has changed over these years.

Baked Chocolate Peanut Butter Oatmeal Recipe

Total Time:30 min
Ingredients:
- ½ cup gluten-free instant oats
- ¼ teaspoon baking powder
- 1 1/2 teaspoons special dark/ dutch cocoa powder
- 2 Tablespoons unsweetened applesauce
- ¼ cup unsweetened almond milk
- ½ teaspoon pure vanilla extract
- 1 teaspoon maple syrup
- 1 Tablespoon creamy peanut butter (or nut-free/peanut-free substitution.)
- ½ teaspoon butter (*Substitute for Vegan)
Directions:
- 1. Preheat oven to 350? F.
- 2. Butter the bottom and sides of a ramekin.
- 3. Mix together oats, baking powder, cocoa powder, applesauce, milk, vanilla and maple syrup in a small bowl.
- 4. Spoon half of mixture into the ramekin.
- 5. Add peanut butter in center, spoon remaining mixture over top.
- 6. Bake for 20-25 minutes.
- 7. Serve immediately.

banana puree or swapping for melted butter could work also. 🙂

Hi Jana,
To be honest I’m not quite sure. It held about 1.5 cups I’d gather. You can use any size you like pretty much. You just may have to adjust the cooking times a bit.

I have been making this for a few years now and I still love it!!! I might sneakily add a few chocolate chips inside and on the top too.
It is yummy and i love it for breakfast, lunch and dessert!Reply
