You’ve just got to try these! They’re delicious little miracle workers. (I think so, anyway!) I discovered keto chaffles and voila; I’m losing weight again and feel great.

Once in a while a genius idea comes along. Recently that would be Chaffles. Pictures of them are everywhere on social media. I apologize as I don’t know who put the original idea out there. But I am grateful.

The original recipe was apparently to mix an egg and a half a cup of shredded mozzarella and cook it in a waffle iron. It sort of looks like a waffle when ready. To me it tasted like scrambled eggs and cheese, toasty-like.

Not bad, as diet waffles go. It didn’t get crispy for me. I couldn’t make myself put syrup on it no matter how much it looked like a waffle. This original chaffle would be something good that you could make if you needed an extreme low carb meal. But for myself, changes would need to be made.

I really liked the idea of a cheesy keto / low carb waffle. But I knew it would take a few more ingredients to arrive at something more waffle-like and crispy-ish. So, keep reading for how I arrived at Chaffles Heaven after quite a few breakfast experiments that my husband appreciated.

This is how I make my version of keto Chaffles

First off I noticed the cute little round waffle makers that were often featured with chaffles. I bought a small dash waffle maker and made side by side comparisons with my large waring waffle maker.

Here’s what I found out: the small waffle makers make 2 for 1 of the larger waffles. Why is that important? This seems to help them crisp up more in the small round makers. Best of all, you can freeze the small round waffles and pop them in your toaster later, ala Eggos.

The one drawback of the Dash waffle maker is that it’s hard to turn them out fast enough even for 2 people, let alone a group. So that’s why you see that I now own two.

Next I added almond flour and baking soda and a bit of cream. I also cut back on the amount of mozzarella cheese. I used a bit of vanilla extract in the batter as well, which was a nice touch. I’ve also tried it with and without sweetener and I think it’s fine both ways. So you choose on whether to use sweetener or not.

Additionally you can add Konjac powder or Xanthan to the dry ingredients if you have these in your pantry. They help baked goods made with gluten free ingredients ‘hold together’ and are commonly used in bakeries in the US and many places in the world.

I used Konjac powder (Glucomannan), but either should work. If you don’t have these things in your kitchen cupboard, skip it. The chaffles will be more fragile and you will have to carefully remove them from the waffle maker to the plate to keep them intact.

Mix up the batter and bake

Remember to plug in your waffle iron before you mix up the ingredients. When putting together the ingredients, all you need is a cereal bowl and a fork to mix the batter in. Be certain to mix together the dry ingredients first, especially if using Xanthan gum.

Next add the eggs, cream and vanilla. Stir ingredients together thoroughly and last, stir in the mozzarella.

This batter will make 6 of the small round keto waffles, using a scant 1/4 cup. I consider two keto waffles a serving. So this recipe makes three servings. I make it up for hubby and I. I just love having a couple of Chaffles to toss in the freezer for tomorrow.

My tip to those who genuinely like crispy waffles is that when the light on your waffle maker goes out or it beeps or whatever it does to tell you your waffle is finished, flip it over and nestle it back into the waffle grooves on the iron, shut it and let cook for a further 3-4 minutes. Ingredients

  • 2 large eggs
  • 1/2 cup mozzarella, shredded
  • 2 tbsp cream
  • 1/2 cup almond flour
  • 1/2 tsp baking powder
  • 1-2 tsp zero calorie sweetener any cup for cup sweetener you prefer (Optional)
  • 1 tsp vanilla extract (Optional)
  • 1 pinch Xanthan Gum (Optional) or Glucomanan powder (optional)

Instructions

  • Plug in waffle iron to warm while mixing the ingredients

  • In a small bow, stir together the dry ingredients; almond flour, baking powder, sweetener (if using) and Xanthan Gum or Konjac (Glucomanan) Powder, if using.

  • Stir in the wet ingredients; eggs, cream, and vanilla (if using).

  • Stir shredded mozzarella into the batte, evenly distributing.

  • If using a small waffle maker: pour a scant 1/4 cup batter onto hot griddle close lid.

    -OR-

    For large waffle Iron: Pour enough batter onto griddle for two small chaffles, (scant half cup) close lid.

If you want your keto Chaffles extra crispy; when they are finished with their first cooking time, turn them over and nestle them back into the waffle iron, close the lid and allow to cook 3-4 more minutes till very golden brown.
